Whole Suckling Pig for the Table
We’ve always loved food that brings everyone round the table and a whole roast suckling pig does just that. It’s something we’ve enjoyed on our travels and while you’ll find versions across the Basque Country, France and Italy, Segovia has perhaps the best bit of tradition: bringing it to the table and carving it with the edge of a plate. A little bit of theatre, certainly, but also proof of just how tender it is. We couldn’t resist.
For six to eight guests, James, Matt and the team will roast a whole suckling pig and serve it the traditional way at the table. It comes with Zucchini Fritti, Garlic and Rosemary Roast Potatoes and a seasonal salad.
That makes a fine meal on its own, though you’re very welcome to begin with a few dishes or finish with dessert from the daily menu and specials board.
Whether there’s something to celebrate or you simply fancy getting everyone around the same table, it will make for a very good evening.
